Quick Healthy Chicken Sausage Saute

Looking for a quick meal after work??..this simple but filling meal took about 15 minutes to prep and you may add whatever vegetables you like! Next time I might add spinach and kale for some extra vitamins.  Best of all..this meal averages around $ controlling portions you get the most bang for your buck!

What You Need: 
1 Bistro Sensations Artichoke, Mozzarella & Garlic Sausage Link 
Quarter, Diced, White Onion
Half of a small whole bok choy diced
1/2 Cup Hunt's diced tomatoes with garlic, basil & oregano (drained)
Half teaspoon of light EVOO or just a small swirl!

Heat the EVOO over medium heat and begin cooking the sausage. After about 5 mins add the veggies. I added some chopped garlic, black pepper, and a tad of sea salt for taste but feel free to get creative with your spices. While my saute was cooking I boiled 2 oz of whole grain penne. After draining the pasta, I tossed with my mixture over low-heat and that was it!  At the end of the day this meal all together totaled under 400 calories! Great meal for one!

Breakdown for one serving: 345 cals/7 gfat/50 carbs/ 24 gprotein/8 fib/ 6 sug


Bok Choy has great health benefits including a large amount of antioxidants and vitamin C. Your body needs antioxidants to help ward off diseases, protect the heart and to lower the risk of developing certain types of cancer. This wonderful green veggie also is a great source of folic acid which pregnant women tend to need in their diets. That's what you call a POWER VEGETABLE!
