Quick Healthy Chicken Sausage Saute

Looking for a quick meal after work??..this simple but filling meal took about 15 minutes to prep and you may add whatever vegetables you like! Next time I might add spinach and kale for some extra vitamins.  Best of all..this meal averages around $2.00..by controlling portions you get the most bang for your buck!

What You Need: 
1 Bistro Sensations Artichoke, Mozzarella & Garlic Sausage Link 
Quarter, Diced, White Onion
Half of a small whole bok choy diced
1/2 Cup Hunt's diced tomatoes with garlic, basil & oregano (drained)
Half teaspoon of light EVOO or just a small swirl!

Heat the EVOO over medium heat and begin cooking the sausage. After about 5 mins add the veggies. I added some chopped garlic, black pepper, and a tad of sea salt for taste but feel free to get creative with your spices. While my saute was cooking I boiled 2 oz of whole grain penne. After draining the pasta, I tossed with my mixture over low-heat and that was it!  At the end of the day this meal all together totaled under 400 calories! Great meal for one!

Breakdown for one serving: 345 cals/7 gfat/50 carbs/ 24 gprotein/8 fib/ 6 sug
